Why is sodium content higher in Elite wild tuna with no added salt?

Because our Elite wild tuna doesn't have salt added as part of the production process, we don't list salt as an ingredient (per FDA guidelines). However, it is brined during storage and therefore not a low-sodium food. 

The difference in salt is due in part to natural variation between species. In addition, the brining of the skipjack during storage is a longer process that allows some salt to enter the muscle tissue.
